Filipino Pork Tinono Recipe
This Recipe is for my mainland friends.
Because the people of Hawaii already know about this and probably rolling their eyes.
You've gotta try this next time you plan to BBQ. It's pork tinono which is basically barbeque pork. It's great to eat with just rice or experiment and try it as Tinono Tacos.
I'm going to tell you the ingredients below, but don't ask how much of each since there aren't set measurement amounts. You have to go off the feeling, taste it, use your senses, channel your inner Filipino. That's what I do...or I ask my wife
Ingredients Needed:
- Pork Belly - We use Island Pork
- Ginger - finely chopped
- Garlic - chopped
- Shoyu Soy Sauce
- Apple Cider Vinegar (for the real deal: Filipino white vinegar)
- Green Onions - Chopped
- Red Onions - Sliced
- Tomato - Chopped into big chunks
Marinade:
- Garlic - Smashed and roughly diced
- Ginger - Smashed and chopped into small pieces
- Aloha Shoyu Soy Sauce
- Apple Cider Vinegar or White vinegar - Use sparingly
- Water to slightly dilute marinade if needed
First, you need to prepare the pork belly by cutting the pork skin from the fat. Keep as much fat on the meat as possible. You'll thank me later. Combine all the marinade ingredients in a bowl with the pork. Let the pork marinate anywhere from 30 minutes to overnight.
Grilling:
Cook the meat on high heat of your grill. You will get some flame ups from the fat, but that's ok. The end results is a solid char to the pork, especially the fat. Make sure it is cooked all the way through though. Cut pork into thin slices that include fat and meat on each piece.
Mixture:
Now add the green onions, red onion, tomato, garlic, and finely chopped ginger to a serving bowl that will eventually include everything. Lastly, add in the grilled pork, shoyu soy sauce, and dash of apple cider vinegar.
The end result is grilled pork with bright flavors that are unique to this recipe. Try it and you won't be disappointed.
